The green bean casserole. A staple of family holiday dinners for as long as anyone can remember. I grew up not really caring for the dish. Probably not a lot of kids crave dish made with beans and cream of mushroom soup. But as I grew older, I realized what the casserole really was. It was the perfect holiday dish.

If you wonder who is responsible for the green bean casserole, it was a woman named Dorcas Reilly. She passed away this month from Alzheimer's Disease at the age of 92. Reilly worked for the Campbell Soup Company for much of her life. She was the driving force behind the simple recipe of green beans, cream of mushroom soup, and crunchy onion toppings. Reilly came up with the dish in 1955.  Campbells says it is the most popular recipe to ever come out of its corporate kitchen. Her original recipe card was put into the National Inventors Hall of Fame in 2002.

The recipe still is popular today. The best thing about it is that even if you can't cook very well, you can make green bean casserole. Last Thanksgiving, the recipe's website got 2.7 million hits. Not bad for a dish created in the 1950's. It's a recipe that will stand the test of time. Thank you, Dorcas Reilly.
