With Christmas now just a few days away, here's another easy dish to make for your family get-together and not a lot of people make this dish. It's cheesy carrot casserole. If my son who's not a fan of cooked carrots likes this, everyone will like this. From the Hansen family recipe book.

Ingredients needed:
4-6 cups of baby carrots
1/2 lb. velveeta cheese
1 stick of butter or margarine can be substituted
1/2 a medium sized onion
8-12 Ritz crackers
splash of milk

First off I started with cooking the carrots in water, bringing it to a boil until the carrots are soft enough to stick a fork in them. Drain water. Usually takes about 5-8 minutes. I chose baby carrots cause they're easier than cleaning regular carrots and cutting them up into smaller sizes

While your waiting for the carrots to be tender enough, melt the stick of butter and 1/2 lb of velveeta cheese together and stir occasionally. I cut the 1/2 lb of velveeta cheese up and then added a splash of milk to get the cheese to melt better and quicker. The cheese, when ready, will be thick like nacho cheese in texture.

Also while waiting for the carrots and cheese to be ready, take your onion and shave it down or mince them into smaller pieces.

When the carrots and cheese are both ready, take your 2 quart baking dish and cover the bottom layer with 1/2 of the cooked carrots. Then add 1/2 of the minced onions over the carrots. Next take the melted cheese and pour about 1/2 of it over the carrots. Repeat this again making a second layer of carrots, minced onions and cheese over the first layer.

To finish off your beautiful masterpiece, take about 8-12 Ritz crackers, crumble them up, and sprinkle evenly over your carrots & cheese. Cover the dish and bake in the over for about 20 minutes or until the crackers start to turn light brown.

This is an easy dish to make. Trust me, if I can make this… you can make this!
