First off, I'm not a cook but I like to try. Here's a nice warm recipe for the cold days of winter that even I can make. Cheesy Broccoli soup and it's easy to make because I was able to whip this up in under 30 minutes on a Sunday evening. This should serve about 4 people. If it doesn't, add sandwiches of your choice.

I combined a few family recipes together. Why? Cause I didn't want to go to the store and buy chicken broth so came up with this without the chicken broth. Hey it's Sunday and it's cold outside.

First off I diced up about half an onion and added that to about a half stick of butter cause every thing is better with butter! I heated the butter and the onions together on medium heat as to not burn the butter and onions for about 5 minutes. After 5 minutes, I added 2 tablespoons of flour along with 2 1/2 cups of milk and 12 oz of velveeta cheese (cut the cheese up into little chunks to melt quicker) and mixed them all together and turned the heat up to medium high and continue to stir. Add more milk if you think the cheese soup is too thick.

While I was getting the above ready, I took 4 cups of baby carrots and 4 cups of broccoli (you can add more or less of each if you'd like) and heated them both separately in boiling water for about 5 minutes. I did this to get them softened quicker. Drain the water and then cut up the carrots into smaller pieces and add the carrots and broccoli to the cheese soup and continue to stir on medium high heat. Add salt and pepper to your taste preference.
